What do you do with an old Wilson’s sock factory? You turn it into a distillery––what else? Named after the iconic Skellig Michael (famously used in Star Wars: The Force Awakens as the hideaway for Luke Skywalker) and its hilltop monastery, this gin and whiskey distillery will soon be a regular stop for travelers taking in the world famous Ring of Kerry.
Whiskey production started in 2022. Plans are in place to distill single pot still whiskey using port and sherry casks, like the ones that have been traveling between this area and the European continent for centuries. The distillery has fought the urge to ship in sourced whiskey while they wait for their spirits to age, so tastings will include samples of their gin, which is infused with local botanicals.
