About Connacht Distillery
If you pass a sign that says “Salmon Capital of Ireland” as you drive through County Mayo, you will have reached Ballina, the home of Connacht Distillery. Built in a former bakery, the distillery has several North American ties, from its master distiller Robert Cassell’s of New Liberty Distillery in Philadelphia, to its American head distiller Ryan, and its three copper pot stills that come from British Columbia, Canada. Looking to highlight authentic Irish whiskey styles, at the time of my visit they were offering a taste of their traditional Irish poitín made with malted barley, the blended whiskey Ballyhoo, and their first in-house single malt, Connacht Batch 1.
If you would like to taste their spirits, they are open for pre-booked tours Tuesday through Friday. Drivers receive a discounted price for tours and are provided with a non-alcoholic drink.
