Blackwater Distillery

When you have a passion, making money isn’t always the first thing on your mind. Author and founder Peter Mulryan has just that kind of focus. A lover of Irish whisky and its history, he set out to build a distillery that could capture the essence of what the spirit was in the past and what it should be now. Appreciative of his neighbor Irish Distillers, Ltd. and how they helped bring Irish whisky back to a world audience, he now wants to push beyond the style they forged in the 1970s and challenge people’s understanding of what Irish whisky is.

Following the tradition of whiskey bonders, the distillery’s first release revives the historic brand Velvet Cap using sourced whisky. As the in-house Dirtgrain whisky reaches maturity, tastings will shift from sourced whisky and new make to tasting the whiskey they make on-site using 100% Irish grains. You will hear a lot about mash bills as John Wilcox, the head distiller, believes grain choice is crucial to making great whisky.
