Ballykeefe Distillery

If you are a fan of farm distilleries and sustainability, Ballykeefe is one of your best options in Ireland. This is a real working farm with the Ging family managing both the land and the stills. As beef and tillage farmers, they feed their own ecosystem, so there is no waste, and nothing from the whiskey making process leaves the grounds. 

Having the owner and distiller take you on your tour is definitely a unique experience. Rather than being given a formulaic tour by a third party, here you can ask questions of the producer and founder. When Morgan Ging shares his whiskey with you during the tasting, he will reveal to you what he seeks to achieve with each expression. He also shares his interest in carrying on the historical traditions of Irish whiskey.
